  Now that we live on our 80-acre homestead in the Keweenaw Peninsula of Michigan, we are always looking for ways to live more simply and self-sufficient at the same time. On top of that, we have an oversupply of fresh salmon.   My husband is an avid fisherman, and he loves that this hobby of his provides food for our family. He annually catches the salmon run in Kenosha, Wisconsin when they come into the river from Lake Michigan. Some of my favorite memories are of us catching fish together!   We have two border collie mixes, a boy and a girl, from the same litter. They are named Brook and Brown after trout! They love going fishing with us and eating the salmon scraps.   With our oversupply of fish this year, (the deep freezer is stocked full) we wanted to find a way to make nutritious meals with the salmon. Because we don’t have an over, the instant pot and crockpot have become my new best friends.   After a bit of trial and error, I found the perfect way to dump all the ingredients into the instant pot and have food that lasts us about a week.   Of course, store-bought salmon will work as well.
